This is the dried version of the Fresh Flageolet Bean, a French heirloom shelling bean that is prized for its earthy flavor and its ability to keep its shape after being cooked. Dried flageolet beans are more commonly found because fresh beans have a very short season. It is one of the key ingredients for Cassoulet.
