A small red bean with a big flavor. The firm Oaxacan red bean becomes tender after cooking (about 20-35 minutes) and can be used in a salad, soup, stew, or side dish. These can be dried for Dried Oaxaca Red Shelling Bean. Good substitutes would be Fresh Cranberry Bean or Fresh Tongue Of Fire Bean.
