Tamarind

Tamarind is used as a flavoring and when it is younger it is acidic and sour then gets slightly sweeter as it matures. Peel the brittle pod and remove the pulp and cover with boiling water. It is often made into a paste for flavoring sauce, chutney, curry dishes, soups and stews.
