Arugula Rapini, aka Arugula Rabe, is the result of the wild greens maturing and become a hardier version of regular Arugula. They have a peppery-vegetal-slightly bitter flavor and because of their tough texture they should be cooked. Use in pasta dishes and Risotto, on pizza, and as a vegetable side dish.
