The Hedgehog Mushroom, or Sweet Tooth Mushroom, is similar to the Chanterelle Mushroom and White Chanterelle Mushroom. They have an earthy flavor and dry-firm texture and are used in Risotto, pasta dishes, sauce, soup, stew, and vegetable side dishes.
