Purple Jerusalem Artichoke, aka Purple Sunchoke, Red Jerusalem Artichoke, and Red Sunchoke, is similar to regular Jerusalem Artichoke but with a sweeter flavor. They have a nutty-slightly sweet flavor and can be braised, boiled and roasted and used for a gratin, soup, stew, vegetable side dish, or purée and use as a substitute for mashed potatoes.
