Yuzu, aka Japanese Citron, is a very prized citrus from Japan. It has an acidic-tart-floral flavor and has little to no juice and is used mostly for the zest. Usually it is made into an oil first before flavoring dishes such as vinaigrette, Aïoli, syrup, and cocktails.
