Hominy, aka Nixtamal or Nixtamalado, is a complicated procedure of processing corn. Usually it is found canned but it can sometimes be found fresh and it has a much firmer-chewy texture. It has a nutty-earthy flavor and is used for Pozole, soup, and stew.
