I always get a chuckle when I see the Caesar Salad on Italian menus. Yes it was invented by an Italian but its origin is from Tijuana Mexico. I have rarely seen the Caesar Salad on a Mexican menu but it is enjoyed on many different restaurant menus. Try this take on the classic Caesar Salad by grilling the Romaine Lettuce (pictured). Also you can try using Little Gem Lettuce as an alternative or bake the Parmesan Cheese to create a different type of Croûton.
