Banana Squash

The banana squash is football shaped and can get up to a meter in length and 15 kilos in weight. The flesh ranges in color from light pink to orange and has a firm-meaty texture and earthy- slightly sweet flavor. Cut in half and remove the seeds and bake or roast for a side dish or puréed soup or braise for a stew.
