Watercress Soup

This soup can be served hot or cold. For best results blanch the Watercress in boiling water and then shock in an ice bath to remove any bitterness. Cook the other ingredients and purée everything together. If you want it the soup to be vegetarian then replace the White Chicken Stock with Vegetable Stock.
