Guaje Seed

The pods are around 25 centimeters in length and only the seeds inside are edible. The seeds are tender and crunchy when fresh and green with a slightly bitter-earthy-grassy flavor. They can be used fresh but are more commonly dried and roasted and used as a seed similar to a Pumpkin Seed.
