Quince

The quince fruit is unique because it needs to be cooked. Once cooked it can be used for compote and chutney, jams and preserves, and baked goods and it is also used to make Quince Paste. It is very astringent and has an aromatic-tart flavor that gets sweeter once it is cooked.
