Cutting Celery, aka Dutch Cutting Celery, Italian Celery, Leaf Celery, Smallage, and Wild Celery, is different then regular Celery Greens because they are primarily grown only for the leaves. The have an earthy-anise-aromatic-vegetal-slightly sweet flavor and crisp-tender texture. They can be used cooked or raw as an herb, braising green, garnish or salad green.
