Ingredient Of The Day: Chinese Bitter Orange

Chinese Bitter Orange, aka Bitter Lemon or Trifoliate Orange, has a sour-acidic-slightly bitter flavor. It is similar to Bergamot Orange and Seville Orange and can be used raw for Aïoli, vinaigrette, and cocktails or cooked for sauces or jam, marmalade and preserves.
