Burnet, aka Salad Burnet, is an herb and a salad green. It is best to use the young leaves because the older ones have a bitter taste. The young leaves have a pungent-minty flavor and can be used for compound butter (Beurre Chivry), garnish, salad, soup, and a sauce.
