Ingredient Of The Day: Nettles

Nettles, aka Stinging Nettles, are available year round but are commonly used in the spring. They do sting so use gloves and be careful. Because of the sting, they should be cooked and can be used in a pasta dish, Risotto, as a vegetable dish, or purée for a nettles soup.
